Yellow tomatoes puree “passata”.
Our “passata” are only made using tomatoes grown in the open fields of Puglia, and we only pick them when they are perfectly ripe, being sure to prepare them within a few hours. The use of a slow, gentle preparation method ensure all the characteristics of the tomato – like its bright yellow color and fresh, wholesome taste – remain intact. The lack of salt means it is possible to enjoy the full flavor of the newly picked tomato.
